Strawberry-Pineapple Salsa

Spring is one of my favorite times of the year. Everything is in bloom and the leaves on the trees are as green as I have ever. One of my favorite parts is all the fruit and vegetables that are in season. The oranges are at their best, the mangoes are sweet, star fruit and dragon fruit are abundant and nothing makes me more excited than incorporating fruit into everyday meals.

This Strawberry Pineapple Salsa is one of my all-time favorites and I probably have this weekly from spring into early summer. It’s amazing on a cool, sunny day when you fire up grill them and toss some margarita chicken on there, or maybe some shrimp skewers. Serve it along with some cilantro lime rice and make a few mango margaritas to keep you cool…how wonderful.

STRAWBERRY-PINEAPPLE SALSA

This recipe calls for simple, fresh, and easy-to-find ingredients and I promise it will take a simple grilled chicken to the next level. There isn’t much to say about the ingredients because it’s just so simple but here goes…

Ingredients and Substitutions:

Strawberry – look for ripe and beautifully red strawberries. If they are starting to get mushy then they won’t hold up well in this recipe.

Pineapple – I like to find a ripe but firm pineapple. You can use pre-cut store-bought pineapple but I recommend staying away from canned fruit. It’s all about the freshness here.

JalapeƱos – are optional but it adds some extra flair so if you can tolerate spicy foods then I would highly suggest that you add the jalapeƱos.

Cilantro – is how we start to season the ingredients and bring it all together. Fresh cilantro is an absolute must, and feel free to add more or less if you like.

Lime Juice, Lime Zest, Chile Powder & Salt – are used to further season the dish and can easily be substituted for Tajin seasoning. But if you are unable to find Tajin then using these ingredients will get you that flavor you need.

Once you toss all the ingredients together then you just pop it into the fridge to keep cold until it’s time to serve. It even holds up well overnight.

  1. Tajin seasoning can be substituted for lemon zest, chili powder and salt.
